Man Eats Raw Chicken for Weeks Without Getting Sick

Consuming raw chicken and eggs can cause severe food poisoning. John, an influencer from Florida, has become well-known for his unusual diet of raw chicken which he has been consuming for at least 25 days. He blends uncooked chicken (wing and breast) with flavourings, raw eggs and lettuce to make a chicken smoothie. Although John’s stomach acid may help to sanitize his blended raw chicken, if the number of bacteria is high, his innate defences may not be sufficient to reduce their numbers to a safe level. Furthermore, taking antacids regularly increases the risk of food poisoning by neutralizing stomach acid.

John’s unusual blending technique may help to lower the risk of food poisoning as it creates a wide surface area for stomach acid to attack the germs. Additionally, the source of his chicken and food seasonings may also help to protect him from infection.

John claims to get his chicken from a particular farm, which suggests that the chicken is fresh and may have a lower incidence of salmonella and campylobacter than commercially sourced birds. However, the safety of raw meat is never guaranteed, and freshness alone cannot ensure that it is free of harmful bacteria.

John uses seasonings such as soy sauce and herbs to improve the flavour of his raw chicken. Soy sauce promotes digestion by enhancing stomach acid secretion and possesses antimicrobial activity against bacteria such as Shigella flexneri, Staphylococcus aureus, Vibrio cholera, Salmonella enteritidis and Escherichia coli. Similarly, many herbs have antimicrobial compounds that can inhibit germ growth, particularly the kind found on poultry.

It is important to note that raw meat, including chicken, cannot be made safe to eat by removing the bacteria. The only way to eliminate harmful germs is by cooking the meat thoroughly at temperatures above 75°C. Cooking chicken correctly is the only way to safely eat it and avoid potentially deadly food poisoning.
